Cornbread

Directions:

  1. Preheat the oven to 375 degrees F. Grease an 8x8 or 9x9 baking pan
  2. Combine 1 cup buttermilk and 1/2 teaspoon baking soda. Set aside.
  3. Combine 1 cup cornmeal, 1 cup all-purpose flour and 1/4 teaspoon salt. Set aside.
  4. Melt 1/2 cup butter in a large saucepot over medium heat.
  5. Remove from heat and stir in 2/3 cups sugar.
    • Then quickly whisk in 2 eggs.
    • Then add buttermilk mixture and whisk again.
    • Finally add remaining dry ingredients and stir until blended.
  6. Pour batter into the prepared pan. Bake in until a toothpick inserted in the center comes out clean, 30 to 40 minutes.
