Cornbread
Ingredients:
- 1 cup buttermilk
- 1/2 teaspoon baking soda
- 1 cup cornmeal
- 1 cup all-purpose flour
- 1/4 teaspoon salt
- 1/2 cup (1 stick) butter
- 2/3 cup white sugar
- 2 large eggs
Directions:
- Preheat the oven to 375 degrees F. Grease an 8x8 or 9x9 baking pan
- Combine 1 cup buttermilk and 1/2 teaspoon baking soda. Set aside.
- Combine 1 cup cornmeal, 1 cup all-purpose flour and 1/4 teaspoon salt. Set aside.
- Melt 1/2 cup butter in a large saucepot over medium heat.
- Remove from heat and stir in 2/3 cups sugar.
- Then quickly whisk in 2 eggs.
- Then add buttermilk mixture and whisk again.
- Finally add remaining dry ingredients and stir until blended.
- Pour batter into the prepared pan. Bake in until a toothpick inserted in the center comes out clean, 30 to 40 minutes.
