Hot Honey Chicken (Sheet Pan)
Ingredients:
- 1/3 cup Dijon mustard
- 1/3 cup honey
- 1/2 teaspoon ground cayenne (optional)
- 1-1.5lb boneless, skinless chicken thighs
- 1 medium head broccoli (or one package of frozen broccoli)
- 1 sweet potato, cut into bite-size pieces
- 1 red onion, cut into bite-size pieces
- 2 tablespoons olive oil
Directions:
- Preheat oven to 475 F.
- Mix mustard, honey, and cayenne in a small bowl. Reserve 1/4 cup in a separate bowl for serving.
- Cut chicken, brocolli, sweet potato, and onion into bite sized pieces.
- Place chicken, brocolli, sweet potato, and onion into a large mixing bowl. Add olive oil, remaining honey mustard mixture, and salt and pepper to taste. Mix.
- Roast until everything is tender, typically 15-25 minutes.
- Serve with reserved honey mustard.
Notes:
- Cutting the sweet potatoes smaller will help ensure they’re cooked in around the same time as the chicken and brocolli.
- Use two sheet pans if everything seems crowded on a single pan.
